Sports season is in full swing here, which means I'm picking up kids instead of putting supper on the table! Do you have any suggestions for easy meals? I've been burning things in the crock pot lately (maybe it's time to throw it out?), and everyone has tired of lunchmeat sandwiches.
Here's one of our favorites: Mushroom Beef Bake
4 lb. chuck roast, trim off fat
1 can Cream of Mushroom soup
1 can mushrooms
1 envelope dry onion soup mix
Preheat oven to 350 degrees. Put half onion soup mix on large sheet of foil in 9x13 pan. Put roast on top and cover with rest of mix. Cover with mushrooms and creamed soup. This makes a delicious gravy. Wrap meat loosely sealing edges of foil onto the side of the pan. Bake for three hours.
Put peeled and sliced carrots in another pan covered with water and sprinkled heavy with celery salt. Cover.
Wrap potatoes in foil with water, and place in the oven at the same time. Everything is fully cooked and ready to eat when you come home. (This is one of my favorite Sunday morning meals!)
I got this recipe from Doris W. Greig's We Didn't Know They Were Angels.
